I am all about easy desserts, and with Summer right around the corner, the fewer the ingredients the better! I want to spend time outdoors, and NOT inside baking. With this recipe, you are done in a jiffy! It’s also sooooo delicious.
This easy lemon bundt cake recipe is just that, easy and delicious! With a delicious cake covered in a sugar glaze, coconut, and a delicious drizzled icing, no one will be able to turn this one down.
You only need a handful of ingredients, so grab your apron and let’s start baking.
Easy Lemon Bundt Cake Recipe
For the sugar glaze you will need:
- 1 1/4 cups powdered sugar
- 3 Tbsp milk
For this Lemon Bundt cake you will need:
- 1 (18oz) package lemon cake mix
- 1 (3oz) package instant lemon pudding mix
- 3/4 cup vegetable oil
- 4 eggs
- 1 cup lemon-lime flavored carbonated soft drink
- coconut
- icing
Step 1: Heat oven to 325 degrees. Lightly grease a 10″ bundt cake pan.
Step 2: In a large bowl or mixer combine cake mix, pudding mix, oil, lemon-lime soft drink, and eggs (one at a time). Stir until mixed well.
Step 3: Pour mixture into the bundt pan and bake for 40-45 minutes, or until a toothpick in the center comes out clean. Allow cooling.
Step 4: In a small bowl combine powdered sugar and milk, stirring well until fully mixed and a glaze is formed.
Step 5: Lightly drizzle the glaze over the cake, rotating inside and out. Top the cake with coconut shavings, and then drizzle over the icing.
The cake is amazing all by itself, but when you add in the drizzle and coconut, it’s just FANTASTIC!
