Easy Pesto Feta Chicken Quesadillas

Hi I am Kimber and I am so excited to be sharing one of my favorite recipes with you today. You can usually find me sharing recipes, crafts, Pin wins and fails and parenting advice over at The Pinning Mama but today I’m here just to chat with you! When Jen told me she was going on vacation and needed someone to do a guest post, I jumped at the chance because I knew how awesome her readers are! So Awesome Readers, let’s get cooking!

Many times when you think of quesadillas you think of the limp cheesy tortilla that is the “safe” go-to meal to feed any kid. Well today we are talking quesadillas but this isn’t your average floppy kids meal variety! I love taking my favorite flavors, mixing it up and trying them in a new form factor. That is exactly what these Pesto Feta Chicken Quesadillas are. Some of my favorite flavors packaged up in my Tex-Mex roots! The result – a match made in HEAVEN! Just look at all that cheesy-pestoy goodness!

It is great because it has unique and bold flavors but it is light enough not to weigh you down in these hot months of summer! You can have a fresh hot meal in minutes without having to heat up the oven. The best part… It couldn’t be simpler to make!

Pesto Feta Chicken Quesadilla

2 Tortillas
1 Teaspoon Butter
1 Tablespoon Pesto
1 Handful Shredded Mozzarella
1/8 Cup Crumbled Feta
1/4 C Shredded Chicken (I used rotisserie!)

Heat a skillet up over medium heat. Butter one side of each tortilla lightly. Place one tortilla in the pan butter side down. Spread the pesto on the side of the tortilla facing up and then sprinkle with the cheese and add the chicken.

Place the second tortilla on top with the buttered side facing up. Cook the quesadilla until the first side is golden brown, about 3-4 minutes, and then use a spatula to flip it over. Cook the second side until it is golden brown and then move the quesadilla to a plate. Cut the quesadilla into triangles and serve hot!

That’s all there is to a fantastic and gourmet dinner! I promise that this meal will impress people. It will just be our little secret how easy it is! If you need an appetizer to serve with it, you might want to try our Greek Dip! It is light and healthy and sure to be a hit!

And NEVER, I repeat, NEVER forget dessert! I would highly recommend our Chocolate, Chocolate Chip Cake! Mmmmmmm….
