This no bake dessert is one of my all time favorites. Don’t get me wrong, I love my no bake strawberry cake, chocolate pie, and banana pudding cake. But this is definitely one of my favorites! These are also perfect desserts to make in the summer when the heat is strong and you don’t want to use the oven.
This easy dessert recipe is made with layers of graham crackers, vanilla pudding layers, whipped cream, and topped with chocolate icing. You’ll love every bite! It’s a delicious cake with the flavors of a classic eclair.
Ingredients:
graham crackers
vanilla pudding
whipped topping
chocolate frosting
I like to make this no-bake dessert as easy as possible, so I typically use boxed vanilla pudding and a premade whipped cream such as a container of cool whip. If you’re feeling “froggy” and want to make these from scratch, you can find a delicious vanilla pudding recipe here and homemade whipped cream here. You can also make your own homemade chocolate frosting.
This easy chocolate eclair cake is as simple as alternating the vanilla pudding mixture with the graham cracker layers, then topping with chocolate! This is definitely a family favorite dessert everyone enjoys.
No-Bake Chocolate Eclair Cake Recipe
- Prepare a 9 x 13 baking dish and set it aside.
- Make the vanilla pudding and whipped cream and set aside.
- Add a layer of whole graham crackers to the bottom of the dish.
- In a large bowl, combine the whipped cream and the vanilla pudding.
- Spread half of the pudding mixture onto the top of the graham crackers, and continue to alternate the graham crackers and remaining pudding mixture into layers.
- Add the final layer of graham crackers to the last vanilla pudding mixture layer.
- Cover the top layer of graham crackers with your favorite rich chocolate frosting. Cover the dish with plastic wrap and refrigerate for 4 hours.
- When ready, remove from the refrigerator and slice and serve.

Can I substitute the graham crackers?
If you want to change the flavors up, consider substituting the regular graham crackers for chocolate graham crackers.
What if I don’t want to use instant vanilla pudding?
If you don’t want to use an instant vanilla pudding mix, consider making your favorite homemade vanilla pudding recipe. You can also substitute instant pudding with chocolate pudding, or make it with a cheesecake flavor.

- 16 oz graham crackers
- 8 oz chocolate frosting

I actually used canned chocolate icing and microwaved it on high for one minute, stirred, and then poured it on top. 🙂
