Chicken with Avocado Peach Salsa

Hi everyone! It’s Dee from Meatloaf and Melodrama again, and I’ve got a fresh and easy way to add some extra flavor to your usual chicken dinner. If you’re anything like me, you serve chicken at least once a week for dinner, so it may get a little boring after a little while. I mean, I love the stuff, but sometimes you just gotta try something new. Since it’s peach season, and we’re big peach lovers in my house, I thought I’d make some salsa from fresh peaches and use that as a garnish. At first the family was skeptical, but this Chicken with Avocado Peach Salsa was definitely a huge hit!

I love fresh salsa in the summer, but up until now, I’ve made salsa with tomatoes. And, I’ve made plenty of  peach desserts, so when I told the kids I was making a salsa with peaches, they were slightly less than thrilled. But like I said, they changed their minds very quickly after one bite. The great thing about this recipe is that you can use it with almost any type of cooked chicken. We love grilled chicken, but this would easily work with baked, fried or even pre-cooked chicken, as well. And really, you could just skip the chicken completely and use it as a dip with some tortilla chips!

Chicken with Avocado Peach Salsa

It helps to use peaches that are ripe but not soft yet. That way, it’s a lot easier to dice them up. The same thing goes for the avocado — you want it ripe but definitely not mushy! And chopped, fresh basil is a must. We have basil growing in a container, and I had one of the kids pick a few springs for this recipe. I did peel the peaches, but I wasn’t too picky about it, so some skin was left on — no biggie!

You just dice the peaches, onions, basil and avocado, add them to a mixing bowl and drizzle honey and lime juice over the whole thing. Then, you mix it up, chill it, and it’s ready to serve over the cooked chicken.

You can serve the chicken over fresh greens, rice or whatever you want!

Ingredients
  

  • 5 ripe peaches peeled and diced
  • 1 small avocado diced
  • 1/4 cup red onions diced
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon honey
  • Juice from 1/2 lime
  • Pinch of salt

Instructions
 

  • Dice the peaches, avocado and onion, and add to a small mixing bowl.
  • Chop the basil, and add to the bowl, along with the salt.
  • Drizzle the honey and lime juice over the salsa, and gently mix.
  • Refrigerate until ready to serve

    OH MY GOODNESS!!! Tried this tonight and EVERYBODY (all 5 kids) cleaned their plates and asked for more… I think the exact phrase was “I dibbs seconds!” Sadly I didn’t make enough for seconds :0( One child asked if we could have it tomorrow night as well :0)
