Easy Recipe for Lemon Bars

I love this recipe because of how easy it is to make. With only six ingredients, this is one of my favorite desserts to bake in the Spring and Summer. It has the perfect buttery crust that’s packed with just the right amount of delicious, bright, fresh lemony flavor.

What Ingredients Do I Need to Make Lemon Bars?

I love this recipe because you probably already have all of the ingredients on hand. (Well, maybe not the lemons 🙂 ) Here is what you will need for this easy dessert recipe.

  • butter
  • white sugar
  • all-purpose flour
  • 3 large fresh lemons, juiced
  • eggs
  • powdered sugar

How Do I Make Lemon Bars?

I love to make desserts. To clarify that statement, I love to make EASY desserts. This dessert recipe is one of those easy desserts that taste like you’ve been working on them all day long.

This recipe comes together relatively quickly. It definitely tastes like there are more steps involved, but you’ll be glad to know they are made with just a few quick steps. Most of the time spent making these lemon bars will be baking them in the oven, which is perfectly fine with me!

  • Preheat the oven to 350 degrees Fahrenheit.
  • Blend 2 cups flour, 1/2 cup sugar, and softened butter in a mixing bowl.
  • Press into a 9×13 pan. Bake for 15-20 minutes until the crust is golden brown.
  • Mix remaining sugar, flour, eggs, and whisk together well.
  • Mix the lemon juice into the sugar, flour, and egg mixture.
  • Pour the lemon mixture over the baked crust and place back into the oven for an additional 20 minutes.
  • Remove from the oven and allow them to cool and firm up before slicing and topping with powdered sugar.

You can scroll down to the bottom of this page for a printable recipe card with all of our easy instructions and a few additional notes. If you have any questions that I haven’t answered, I would love for you to leave me a comment and let me know! I can also update the post with relevant ideas that I may not have thought of, so feel free to leave me your suggestions as well.

See! This truly is an easy recipe with quick and easy steps.

How Do I Store Lemon Bars

Wait, you have leftovers? How did that happen? You must have made these in bulk for a party because we NEVER have leftovers. But just in case you have leftovers, this easy recipe for lemon bars is perfect for storing.

I would suggest cutting squares of wax paper or parchment paper to separate the lemon bars before stacking them for storage.

  • Store in the refrigerator for up to a week in an airtight container.
  • Store in the freezer for up to 3 months in an airtight container without the powdered sugar topping.

These really are the best, and I know this is one of my moms favorite treats. Never a better way to show love than to bake with love, right?

Notes

  1. Looking for variations? Consider switching out the lemon for fresh squeezed limes and create lime bars!
  2. Make sure the bottom crust is hardened and a golden brown color before adding the lemon mixture.
  3. When storing these lemon bars separate them with wax or parchment paper to keep them from sticking togehter.
  4. Store in an airtight container in the refrigerator for up to a week.
  5. Freeze leftover lemon bars in an airtight container for up to 3 months, preferrably without the powdered sugar topping.

I love this recipe – very easy to make. I just have one question… I have home grown lemons in all different sizes, is there a measurement for the lemon juice? approx a cup or 1 1/2 cups? Just wanted to know if you ever measured the juice of your 3 large lemons.

I never did measure the juice, but I know I was able to get a lot of juice out of them.
