It’s a running joke in our house that the bananas ripen when no one is looking. I swear that I buy my bananas with a few days to spare but they ripen so quickly it seems! Thankfully once that happens, I just turned it into a mashed banana that makes the perfect air fryer muffins.

Everyone in the family really does love these delicious muffins because I always get the best results when I make them. It’s one of those great recipes that are a keeper, for sure!

Use this banana muffin recipe as the best part of your morning. It’s a great way to have a delicious recipe with simple muffin batter and a short cooking time!

Easy Banana Muffins

You can use silicone muffin cups for this recipe or foil muffin cups- whatever you’d prefer. Putting them into a preheated air fryer will have these air fryer banana bread muffins ready in no time at all. I swear – the cooking process is a breeze once you put it into your air fryer basket!

Once you’re ready to add the wet ingredients to the muffin pan, just make sure to fill it only about 3/4 full. You don’t want this muffin mixture to leak over the tOP and waste any of this deliciousness!

Banana Muffin Ingredients

  • all-purpose flour
  • white sugar
  • light brown sugar
  • baking powder
  • bananas 
  • vanilla flavoring
  • egg
  • unsalted butter

How to Make Air Fryer Banana Muffins

Once you make these homemade muffins once, you’re going to be hooked and ready for more! Keep this recipe handy – you’ll be using it again quickly!

How To Make Homemade Banana Muffins

Combine the flour and baking powder in a large bowl and set aside. 

In a medium-sized mixing bowl, use a hand mixer to cream together the butter, white sugar, and brown sugar. 

Add the egg and vanilla extract into the butter and sugar mixture. Mix well.

Pour the butter and sugar mixture into the dry ingredients and use a spatula to mix well. 

Gently fold in the mashed banana to the batter until just combined.

Using a large scoop to fill the silicone cups about ¾ of the way. If using a small muffin tin, fill paper liners ¾ of the way.

Gently place into the basket. Air fry at 350 for 6-8 minutes.

Carefully remove the banana muffins from the air fryer basket and allow them to cool slightly on a wire rack before serving.

FAQs

What type of air fryer do you need for this recipe?

The Air Fryer I used for this recipe was the Cosori 5.8 quart air fryer. 8 minutes was the perfect amount of cook time in this air fryer for these banana muffins. If you have a different brand of air fryer, you may need to add or take away time to ensure this cooks correctly. Remember, all air fryers cook a little differently. 

Can you add other ingredients to these banana muffins?

You can add all your favorite fruit! A family favorite in our house is to add some peanut butter chips or chocolate chips to the batter for an extra boost of flavor! We also like to drizzle some maple syrup on the top of the muffins.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup white sugar
  • 1/3 cup light brown sugar
  • 1 teaspoon baking powder
