I seriously can’t believe it’s fall already. September has come and gone. Fresh corn and tomatoes are starting to leave our farmer’s market bins and are being replaced with pumpkins and butternut squash. I don’t know if I’m necessarily sad about this. Fall is one of my favorite seasons. 60 degrees with sunny skies and light winds? I’ll take it.

What I love most about the seasons changing are the changes that we make in diet and foods that we like to eat. We transition from chilled salads and grilled steaks to comfort foods like spaghetti and meatballs and roast beef.

While I definitely like to indulge as the temperatures start to lower, I definitely find myself still gravitating towards light and wholesome salads like this Thai chopped chicken salad quinoa bowl.

These bowls in particular contain chicken for some protein, fresh veggies for some crunch and quinoa for some added texture. You don’t have to use these ingredients if you don’t want to though!
