Ingredients needed for Pumpkin Spice Energy Bites
This recipe calls for a handful of ingredients and if you use a shopping list, write them down so you don’t leave any of them out! But you will thank me for these when you’re enjoying them.
quick-cooking oats- roasted, salted pepitas (shelled pumpkin seeds)
- raw sunflower seeds
- flax seeds
- chia seeds
- pecans halves, broken into pieces
- white chocolate chips
- ground cinnamon
- ground ginger
- ground nutmeg – OR – skip the 3 spices and use pumpkin pie spice
- pumpkin puree
- honey
How to make homemade energy bites
- In a large mixing bowl, combine all ingredients.
- Use a rubber spatula or a spoon to mix together.
- The mixture will look wet and will be “loose” and not stick together.


Pack mixture into a small ice cream/cookie scoop (about 1 ½ – 2 tablespoons).

Scoop into your hands and start making a ball by first “mushing” and transferring back and forth between hands until it holds together then roll into a ball.
Pumpkin Energy Bites

Place on a cookie sheet and chill in the refrigerator for 15 minutes.
Store in a ziplock bag or container with a lid in the refrigerator.
