What You Need

Only a few basic ingredients are required to make these great squares. Having these pantry items on hand makes it easy to make them on the fly.

  • Flour tortillas: Burrito sized flour tortillas work best because they provide a solid, stackable foundation.
  • Deli ham: Deli ham, thinly sliced or leftover baked ham, offers a familiar, savory taste.
  • Cheddar cheese: Sharp cheddar cheese, freshly shredded, melts beautifully and holds the tortilla layers together.
  • Cream cheese: Cream cheese, softened, adds a rich, tangy creaminess and prevents the center from becoming dry.
  • Dijon mustard: A tiny amount of Dijon mustard boosts the rich cheese filling with savory flavor.

How To Make It

Here is how easy this comes together.

Prepare the Spread

In a medium mixing bowl, combine the softened cream cheese and Dijon mustard until well mixed. The mixture should be spreadable so as not to rip the tortillas.

Layer the Base

Cut the tortillas into halves or quarters, or trim the rounded edges. Arrange the pieces to create a flat, even, edge-to-edge layer in the bottom of dish. Spread a thin, even coating of the cream cheese mixture onto the tortilla, leaving a small border around the edges.

Add Ham and Cheese

Place an even layer of ham slices on top of the cream cheese layer, making sure the ham slices slightly overlap each other. Then sprinkle the shredded cheddar cheese over the ham.

Stack and Bake

Repeat the layering steps until all of the tortillas are used, ending with a plain tortilla topped with the remaining shredded cheese. Bake at 375°F for 15-20 minutes, until the cheese is melted, bubbly and golden.

Tips

  • Let the cream cheese sit at room temp for 30 minutes so that it is super easy to spread.
  • Press down gently on the top tortilla before baking to help all the layers stick together.
  • Let it rest for at least 5 minutes before cutting into squares so that the hot cheese has time to set.
  • Use a pizza cutter instead of a knife, it is the fastest way to cut.
  • You can also use Swiss or pepper jack cheese instead of the sharp cheddar, if desired.

How to Store

  • Store: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freeze: Wrap each square individually in plastic wrap, then store in a zip-top bag in the freezer for up to 2 months.
  • Reheat: Heat in a 350°F oven or air fryer for a few minutes to re-crisp the edges.

How to Serve

  • Serve with a bowl of tomato soup for a delicious, satisfying lunch.
  • Serve with a honey mustard dip on the side.
  • Pack in a lunch box for a fun and filling change from a standard cold sandwich.
  • Serve with a salad dressed with a light vinaigrette.
