Tips for Success

  • Quick sear beef chunks in a hot skillet for more flavor.
  • To reduce the liquid, in the last 30 minutes of cooking, mix a cornstarch slurry into the gravy and continue to cook until the gravy thickens.
  • Use low-sodium beef broth and soup for this recipe to cut down on the beef’s natural salt content.
  • Do not add noodles to a slow cooker and cook all day or they will become mushy.
  • Keep the lid on so the beef can stay tender and juicy.

Storage Instructions

  • Store: Leftovers can be kept in the refrigerator for up to four days. The noodles will continue to absorb the rich gravy, making each successive bowl better than the last.
  • Freezer: This dish will keep in the freezer for up to 3 months. Reheat and then serve over fresh noodles.
  • Reheat: Reheat slowly over low heat on the stove or in the microwave and add a bit of water if the stew has thickened too much.

Serving Suggestions

  • Serve with warm crusty bread to use up the leftover gravy.
  • Pair it with some simple roasted green beans or steamed carrots.
  • Serve over mashed potatoes instead of noodles for a variation of Poor Man’s Beef and Noodles.
  • Add a fresh salad of garden greens, served with a light vinaigrette.
