Easter Breakfast Tips

There are a couple of things you’ll want to prepare ahead of time for the best Easter bunny carrot waffle experience. First, cook your carrots. You’ll need two cups of cooked carrots. They can be boiled or steamed, so cook them according to your preference.

Before you begin making these tasty carrot waffles, you’ll also need to prep your waffle iron. Don’t have a waffle iron yet? Here’s one that would be totally adorable for Easter bunny carrot waffles:

You’ll need to heat your waffle iron and grease it well. Generously greasing the waffle iron before adding batter and after each waffle will help ensure that the edges are crispy and buttery. Once your carrots and waffle iron are ready, you can begin making the batter for your Easter waffles.

We prefer to use King Arthur Gluten Free Pancake & Waffle Mix for delicious gluten free carrot waffles. However, I’ve used wheat mixes in the past and they turn out really well too.

Instructions for Creating Easter Bunny Carrot Waffles

  1. Divide cooked carrots in half. Puree one cup of carrots and mix with the milk to add into your waffle mix.
  2. Follow instructions on the box to mix the batter for your waffles. Make waffles according to box instructions with the addition of having added the carrots to the milk and blending it together.
  3. The carrot waffles will cook in about 3 minutes in your waffle iron. Remove when they are golden brown.
  4. Use reserved carrots to create maple syrup topping for your Easter waffles. Mix remaining cup of carrots with 2T – 4T maple syrup in a non-stick pan. Heat them until the syrup has thickened to glaze the carrots. 
  5. Serve waffles with warm carrot syrup on top.

Make sure you generously grease the waffle iron each time before adding batter so the outsides of the waffles will be crispy.

Cook according to box and waffle iron instruction, about 3 minutes, until golden brown.

As soon as they come out of the iron I set them onto a wire rack in a single layer, this helps keep them crispy. Repeat with the rest of the batter.

Check out these pro tips for making sure your waffles turn out fabulous every time:

  • Don’t lift the lid on your waffle iron too early. Early lifting could cause your Easter waffles to tear and stick to the waffle maker, creating a mess instead of cute carrot waffles.
  • As soon as the Easter waffles come out of the waffle iron, I place them on a wire rack in a single layer. This helps to ensure the waffles stay crispy.
  • Freeze leftover carrot waffles in freezer bags to enjoy later in the week.
  • Clean your waffle maker shortly after it has cooled. That way, nothing gets stuck on for too long, making it difficult to clean up. This helps ensure you’ll be able to make Easter bunny carrot waffles whenever you want them.

Ingredients
  

  • 1 15 oz box of your favorite waffle mix
  • 2 cups of cooked carrots
  • Milk
  • Maple Syrup
  • you'll need any additional ingredients that your waffle mix calls for

Instructions
 

  • Divide cooked carrots in half. Puree one cup of carrots and mix with the milk to add into your waffle mix.
  • Follow instructions on the box to mix the batter for your waffles. Make waffles according to box instructions.
  • Add your pureed carrots into your waffle mix.
  • The carrot waffles will cook in about 3 minutes in your waffle iron. Remove when they are golden brown.
  • Use reserved carrots to create a maple syrup topping for your Easter waffles. Mix remaining cup of carrots with 2T – 4T maple syrup in a non-stick pan. Heat them until the syrup has thickened to glaze the carrots.
  • Serve waffles with warm carrot syrup on top.
