- 4 Boneless Chicken Breast
- 1 Cup Shredded Cheddar Cheese
- 11 oz can Corn
- 1 Cup Black Beans (Rinsed & Drained)
- 4 oz Can Green Chilies
- 3 Roma Tomatoes (Diced)
- 3-4 Green Onions (Diced)
- 1/3 Cup Cilantro (Chopped)
- 1 Lime
- ½ tsp Cumin
- ½ tsp Garlic Powder
- ¼ tsp Onion Powder
- ¼ tsp Chili Powder
How To Make This Southwest Chicken Recipe




- Start by preheating the oven to 375º Fahrenheit degrees.
- Spray a casserole dish with oil and place the chicken inside. Mix the seasonings and sprinkle over the chicken. Set aside.
- In a medium-sized mixing bowl, add the corn, black beans, green chilies, tomatoes, cilantro, and the juice of 1 lime. Mix and layer over the chicken.
- Top with cheese and green onions. Cover with foil and place in the oven for 40 minutes.
- Take out, remove foil, and place back in the oven for an additional 10-12 minutes or until the internal temperature of the chicken reaches 165º Fahrenheit.
