What You Will Need

All you need to make this beef stew are a few ingredients. You will need beef stew meat, cream of mushroom soup, dry onion soup mix and water.

Beef Stew Meat

I like using pre diced beef stew meat for this recipe. Its so much easier to grab out of the freezer and throw in the oven. It takes hours to cook so even if you buy a cheap cut of beef it will be super tender. You can always take a chuck roast and cut it into 1 inch pieces.

Cream of Mushroom Soup

Cream of mushroom soup is one of those mid west staple ingredients that we always keep in our pantry. It gives this recipe a thick base to make the gravy without having to use a flour based thickening. Its a good source of flavor and will help the beef stay moist. You can replace one of the cans of cream of mushroom soup with 1 cup of low sodium beef broth.

Dry Onion Soup Mix

Using dry onion soup mix will make this entire casserole flavorful. No chopping needed! Its full of dehydrated onion and beef flavor. If you want to make a low sodium version you can mix some dried minced onion with garlic powder and a pinch of salt.

Directions

Here are a few easy steps to follow to make this beef dinner.

Prepare Your Baking Dish

Set your oven to 300 degrees. You want to make sure you spray your 9×13 baking dish with olive oil or cooking spray. This will help the gravy not stick to the edges of the pan.

Place the Beef Stew Meat

Take your raw beef stew meat and place it on the bottom of your glass baking dish. You want to break up any beef that may be stuck together.

Make Your Gravy

In a medium size bowl whisk your cream of mushroom soup, onion soup mix and water. It doesn’t need to be perfect just stirred well.

Pour on Top of the Beef

Pour your mushroom soup mix over the raw beef stew meat. Make sure all the beef is coated. Cover with aluminum foil.

Bake and Serve

Cook for 2 ½ – 3 hours or until the beef is fork tender. Once its done remove the aluminum foil and stir. Allow to rest for 5 minutes and enjoy!

Tips

  • Do NOT lift the aluminum foil off of your casserole while its cooking. By doing this you will lose the moisture that is being trapped inside of the pan. Your beef will take longer to become tender.
  • Add some mushrooms! I love adding mushrooms to this casserole. Add about 1-2 cups of sliced mushrooms to the raw beef before you add your mushroom soup mixture.
  • Add 2 tablespoons of sour cream or greek yogurt to the sauce after its cooked. Stir until combined but do this off of the heat.
