Ingredients
  

  • 1 can corned beef 12 oz.
  • 1 bag Frozen sliced potatoes 30 oz slightly thawed, or 30 oz potatoes, thinly sliced" if using fresh"
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 onion chopped, optional

Instructions
 

  • Preheat the oven to 400°F (200°C). Lightly grease the baking dish.
  • Remove the corned beef from the can and break it up in a large mixing bowl using a fork.
  • Add your frozen diced potatoes to the mixing bowl and stir well so that the corned beef is distributed evenly throughout the potatoes.
