Ingredients You Need

To make this recipe, you’ll need a can of Spam, Russet potatoes, and milk.

Spam

A can of spam is a great way to get lots of flavor from a canned product. It’s already seasoned, so all you need to do is slice it thinly. If you can’t find it or aren’t a fan of it, you can use diced ham or smoked sausage. Either way, you’ll be getting plenty of salty flavor.

Russet Potatoes

I tend to always use Russets since their high starch content will make the liquid thicken as the casserole cooks down. You’ll want to peel them and cut them into very even, thin slices so that they will all cook in the same amount of time. If you have Yukon Gold potatoes, you can absolutely use those instead. Since Yukon Golds are waxy, your final sauce may be a little thinner, but still delicious!

Milk

The whole milk will gently simmer the potatoes so that they become incredibly tender. Simply pour the milk directly into the layered dish and it will transform into a rich, creamy base in the oven.

If you’re looking to make this on the weekend for a special meal, you can easily substitute half-and-half or heavy cream. Or, for a dairy-free version, unsweetened, plain oat milk works wonderfully without adding any unwanted vanilla notes.

How to Make It

Using a baking dish, let’s get this easy-to-make comfort food ready for the oven.

Prep the Ingredients

First, preheat the oven to 350°F and lightly grease a medium-sized glass baking dish. Peel the potatoes and carefully slice them into very thin, even slices. Slice your canned meat into thin slices as well.

Layer the Base

Arrange half of the sliced potatoes evenly on the bottom of your prepared pan. Overlap the edges slightly to create a solid base. Add half of the sliced meat on top of the potatoes.

Finish the Layers

Use the remaining potatoes and meat to repeat the previous step. Ensure that your layers are relatively even so that they will cook at the same pace. Slowly pour the milk over the top of the entire dish, ensuring that the milk finds its way into every nook and cranny.

Bake Covered

Cover the baking dish with aluminum foil and bake for one hour. This will allow the starches to soften in the milk. This step also ensures that the top doesn’t burn while the middle becomes tender.

Brown and Serve

Remove the foil and return the dish to the oven for an additional 20-30 minutes. You want the edges to brown and slightly crisp up. Allow the casserole to sit on the counter for 10 minutes before serving.

Expert Tips for Success

The most important thing to remember when making this dish is to slice the potatoes as evenly and thinly as you possibly can. If your slices are too thick or uneven, you will have crunchy, raw pieces in the middle of your casserole. A mandoline slicer will make this much easier if you have trouble slicing potatoes to an even thickness with a knife.

Be sure to let it sit for a bit once it comes out of the oven. Letting it sit for 10 minutes gives the liquid and starches time to set and thickens the dish. Scooping it right away would just result in a soupy mess falling apart on your plate.

Want to take this recipe up a notch? Try adding some thinly sliced sweet onion between the layers. The onions melt into the hot milk, adding a rich savory sweetness to the dish. You can also stir in a bit of garlic powder into the milk before pouring it over.

Storage & Reheating

  • Store: Put any leftover, completely-cooled casserole in an airtight container and refrigerate for up to 4 days.
  • Freeze: I don’t recommend freezing this casserole. When thawed, the dairy and potatoes can turn quite grainy and mushy.
  • Reheat: Microwave a single portion for 1-2 minutes. Reheat the entire pan in a 350°F oven until heated through.

What to Serve with It

  • Crispy roasted green beans in garlic butter
  • Garden salad with a tangy vinaigrette
  • Warm, fluffy dinner rolls
  • Sweetened, steamed carrots

Frequently Asked Questions

Can I make this casserole ahead of time?

No, you should make this casserole as close to cooking as possible so the raw potatoes aren’t soaking in the liquid too long. If they’re soaking too long, they’ll start to oxidize, affecting the final texture.

Do I need to cook the meat or potatoes first?

Nope! Everything goes into the baking dish raw and finishes cooking in the oven. The steam from the milk helps everything cook to perfect tenderness.
